Nuts are no different — roasted fats begin their slow decline the moment they cool, which is why supermarket mixes taste of cardboard and ours don't. Why the date matters
Roasted nuts peak in the first weeks after roasting, while the oils are bright and the crunch is glassy. A printed roast date lets you taste the difference instead of taking our word for it — which is, you may have noticed, the house habit.
Storage
Reseal the pouch properly and keep it cool and dark. Better yet, don't test how long they last — they weren't roasted to sit.
